ONION
POCKETBURGER`S

1 c. ketchup
1 tbsp. Worcestershire sauce
1 tbsp. brown sugar
1 tbsp. prepared mustard
3 lg. onions, cut in half crosswise
1 1/2 lbs. ground beef
1 egg
1 sm. green pepper, finely chopped
1 1/2 tsp. salt
Dash pepper

Combine first 4 ingredients and set aside. Scoop out centers of onions (save for use at a later time). Place each half onion on a square of heavy duty foil. Combine ground beef, egg, green pepper, salt, pepper and 3/4 cup of the ketchup mixture.
Shape into 6 balls and place one in each onion half. Pour remaining sauce over each onion.

Bring 4 corners of foil loosely together in a pyramid shape, allowing room for heat circulation and expansion. Seal by folding over ends and pressing together. When the coals have a grey ash, place foil wrapped onions on grill and cook for approximately 50 to 60 minutes. Onion Pocketburgers may also be cooked in a 350 degree oven for about the same length of time.

Coca-Cola Cake

Ingredients

CAKE:
2 cups flour
2 cups sugar
1 cup (2 sticks) margarine
1 cup Coca-Cola
1/2 cup buttermilk
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
3 tablespoons cocoa
1 1/3 cups miniature marshmallows

Icing:
6 tablespoons Coca-Cola
3 tablespoons cocoa
1 box (16 ounce) powdered sugar
1 cup pecans, chopped
1/2 cup (1 stick) butter

Directions

1.     Preheat oven to 350 degrees.
2.     Grease 13x9 cake pan.

Cake:
1.     Combine flour and sugar.
2.     Heat margarine and Coca-Cola to boiling point; pour over flour mixture. Mix well.
3.     Add buttermilk, eggs, baking soda, vanilla, cocoa, and marshmallows.
4.     Pour into prepared pan.
5.     Bake for 35 minutes.

Icing:
1.     Combine butter, Coca-Cola, and cocoa.
2.     Heat mixture, pour over powdered sugar. Use more or less powdered sugar as needed. Beat well.
3.     Ice cake while cake is still hot.
4.     Sprinkle chopped nuts over cake.

Jean’s Spaghetti Pie

Makes 4-6 servings 

Ingredients

7 ounces uncooked spaghetti
2 tablespoons butter or margarine
1/3 cup parmesan cheese, grated
2 eggs, beaten
1 cup cottage cheese
1 pound ground beef
1/2 cup chopped onion
1/4 cup green pepper, chopped
1 can (16 ounce) diced tomatoes with liquid
1 can (6 ounce) tomato paste
1 teaspoon sugar
1 teaspoon dried oregano
1/2 teaspoon garlic salt
1/2 cup shredded mozzarella cheese

Directions

1.     Grease a 10 inch pie plate.
2.     Cook spaghetti according to package directions, drain.
3.     Combine hot spaghetti, butter, parmesan cheese and eggs in a large bowl.
4.     Place in prepared pie plate.
5.     Using your fingers, form a crust.
6.     Spread cottage cheese over spaghetti.
7.     Preheat oven to 350 degrees.
8.     In skillet, cook ground beef, onion and green pepper until beef is browned an onion is tender, drain.
9.     Stir in tomatoes, tomato paste, sugar, oregano and garlic salt. Heat through.
10. Pour meat mixture over cottage cheese layer.
11. Bake, uncovered for 20 minutes or until set.
12. Sprinkle with mozzarella cheese.
13. Bake 5 minutes longer or until cheese is melted.

Jean’s Fruit Salad Deluxe

Makes 1 huge bowl   

Ingredients

1 can Comstock peach pie filling
1 can pineapples, chunks
1 large can sliced peaches
2 cans tropical fruit salad (Del Monte)
1 large tub frozen sliced strawberries, thawed
1 small can mandarin oranges (optional)
1/2 cup - 1 sliced bananas (optional)

Directions

1.     Mix all ingredients together. Chill

Barbecue Meat Loaf

 Ingredients
3-4 pounds ground turkey or ground beef
2 large eggs
1 1/2 cups bread crumbs, seasoned
1 1/3 cups barbecue sauce
1 teaspoon seasoned salt
2-3 teaspoons liquid smoke

Directions

1.      Preheat oven to 375 degrees.
2.      Combine thoroughly ground turkey or ground beef, eggs, seasoned bread crumbs, barbecue sauce, seasoned salt and liquid smoke in a large mixing bowl.
3.      Pour into a 5 qt. baking dish and shape into a loaf.
4.      Bake, uncovered for 1 1/2 to 2 hours, until done.
5.      Serve with fried or baked potatoes.

 Irish Coffee Cream Pie

 Ingredients
1 (9 inch) graham cracker crust
1/4 cup instant coffee
2 teaspoons hot water
3 cups whipping cream
1/2 cup plus 1 teaspoon powdered sugar
6 tablespoons Irish whiskey
6 tablspoons Kailua shaved chocolate (garnish)

Directions

1.      Dissolve coffee in hot water.
2.      Combine all ingredients except garnish and beat at medium speed until mixture forms peaks.
3.      Pour all but 3/4 cups into crust, spreading evenly.
4.      Spoon remaining filling into pastry bag to decorate with rosettes.
5.      Garnish with saved chocolate.
6.      Chill thoroughly for at least 4 hours.
7.      Serve chilled.

Chocolate Bombs

Makes 12 bombs   

Ingredients

1 cup butter
3 eggs
1 cup sugar
1 teaspoon vanilla
2/3 cup all purpose flour
1/3 cup cocoa powder

Directions

1.      Preheat oven to 350 degrees.
2.      Melt the butter in a saucepan at low temp.
3.      In a bowl, mix the eggs, sugar and vanilla thoroughly.
4.      Sift the flour and cocoa into the sugar mixture and the add the melted butter - mix well.
5.      Pour the mixture into 12 - 1/2 cup non-stick muffin tins and bake for 15 minutes or until the muffins are cooked in the middle (poke with a toothpick and if comes out clean they are done).
6.      Cool them in the tins.
