John Wayne CORN DODGERS


1 c. cornmeal
1 tsp. salt
1 tbsp. butter
1 1/2 tsp. sugar
1 c. boiling water


Start oven, set at 400 degrees then grease a baking sheet. Combine the cornmeal, salt, butter and sugar then mix well. Pour the water over the cornmeal mixture and beat until well blended. Drop the batter from a tablespoon onto the baking sheet. Bake about 20 minutes. This batter can also be cooked on a hot, greased griddle. Makes 12 dodgers.

Easy Biscuits

SOME EASY BISCUITS

FIXIN`S;
2 cups all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 cup cold buttermilk  
4 tbsp. butter Sofened.
1 tbsp. sugar Or Splenda

WHAT TO DO;
Preheat oven to 475°F. And Lightly grease a baking sheet. Measure dry ingredients into a medium bowl (sifting is not necessary). Add butter and milk to the dry ingredients and stir until just combined Until Mixed.
Immediately drop A Half Palm Full onto baking sheet, Brush The Top Of The Biscuits With A Little Melted Butter Fo Extra Flavor.
Biscuits Should Be about 2 inches apart. Bake for 10-15 minutes. For larger biscuits, drop AFist Full onto baking sheet about 3 inches apart, and bake for 20-25 minutes. Biscuits are done when golden brown on top and lightly browned on the bottom.

PONE CORN BREAD
 Grease a well-seasoned empty corn pone pan and heat in a 375°F oven.
Sift:    4 cups corn meal

Add:   1/2 tsp. baking soda
            1 tsp. baking powder
             1 tsp. salt

Mix with buttermilk until a soft enough To form And thick enough to shape into corn pones. Pull shelf out from oven with hot pan on shelf; using a spatula push pone into sizzling hot pan 2/3 full. Place hot pan in oven and finish baking for 30 minutes.

PINEAPPLE UPSIDE DOWN CAKE

2/3 cup butter
3/4 cup brown sugar
1 can pineapple slices
maraschino cherries  

Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.
Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge).
Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).
Pour the batter over the pineapple and cherries.
Bake at 350°F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.

BREAKFAST BROWNIE
 3/4 c. pancake mix
1/4 c. cocoa
1/2 c. sugar
3/4 c. milk
1/4 c. oil
1 egg, slightly beaten
1 2/3 c. Raisin Nut Bran cereal
1/2 tsp. vanilla
Mix pancake mix, cocoa, and sugar. Add milk, oil and egg. Stir. Fold in cereal. Pour into 9 x 9 inch pan sprayed with Pam. Bake at 425 degrees for 15 minutes.

Great Holiday Desert  


3 (3 oz. each) pkgs. Jell-O (cherry, lemon and lime)
1 cup of hot water
21 large marshmallows
1 (8 oz.) pkg. cream cheese
1 small can of crushed pineapple, drained
1 (8 oz.) Cool Whip

Prepare cherry Jell-O in a 9 x 13 inch pan and chill ahead of time. Mix lemon Jell-O, hot water, marshmallows, and cream cheese in a large sauce pan. Stir until melted over medium heat, and then let cool.
Add pineapple and Cool Whip. Pour over cherry Jell-O and let set until firm. Prepare lime Jell-O and pour over prepared mixture and let set.

PEANUT BRITTLE  

   
2 c. raw peanuts
1 1/2 c. sugar
2/3 c. Karo syrup, light
2 tsp. baking soda

Cook peanuts, syrup, and sugar until honey color. Peanuts will start to pop when ready. Add soda. Remove form heat. Quickly pour onto buttered dish. Spread. Cool and break into pieces.
