JEAN`S SWEET POTATO BISCUITS

2 1/2 cups biscuit mix

1/3 cup butter, softened

1 can sweet potatoes, mashed

1/2 cup milk

Mix ingredients in the order above and mix until a soft dough is obtained.

Turn dough out onto a lightly floured work surface and shape into a ball; knead 3-4 turns.  

Roll out to a 1/2-inch thick.

Using a biscuit cutter cut out biscuits.

Arrange biscuits on a greased or parchment-lined baking sheet.

Bake in preheated 450°F oven for 10-12 minutes or until golden.

Makes a pan full of biscuits.
