Scooby Doo


BARBECUE STEAK IN FOIL

8-10 oz. Sirloin tip steak (per serving)
2 tablespoons Kraft Classic Barbecue Sauce
1 onion, chopped
1 clove garlic, minced
1/2 green pepper, seeded, chopped
1 tablespoon butter or olive oil
2 18-inch squares heavy duty foil
salt, pepper and garlic powder

Cut the sirloin tip steak into 1 inch cubes. Season with salt, pepper and garlic powder.
Place steak cubes in center of foil (shiny side of foil facing inward) and cover with remaining ingredients.

Wrap up into a foil packet or envelope, with seam facing up and with a secure, double fold to retain juices within the packet. Place over sizzling hot coals and cook for an hour or less, according to desired doneness.

Serve with buttered and grilled bulky rolls.

Scooby Doo

Chocolate Chip Cookies


Ingredients

1 cup shortening
1/2 cup granulated sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chocolate chips

Directions

1.      Preheat oven to 375 degrees
2.      Cream together the shortening and both sugars
3.      Then add eggs, vanilla, flour, baking soda and salt
4.      Once the shortening, sugar, eggs, vanilla, flour, baking soda and salt mixture is all creamed together, add the chocolate chips
5.      Mix together, well.
6.      Drop cookie dough by teaspoonfuls onto ungreased cookie sheets
7.      Bake for about 9-12 minutes or until golden brown.

Jean’s Cornbread Salad


Ingredients

1 package cornbread mix, plus ingredients to prepare
1/2 cup celery
1 bell pepper
2 red tomatoes
1 bunch green onions
3 hard-boiled eggs
Salad dressing of choice

Directions

1.      Cook 1 package cornbread mix using water instead of milk.
2.      While it is cooking, chop up the celery, bell pepper, tomatoes and green onions.
3.      Grate the hard-boiled eggs.
4.      Crumble cornbread and mix with vegetables, eggs, salad dressing of choice.

Puffed Pancake “Gotta Try This”

Makes 6 servings

Ingredients

6 eggs
1 cup milk
1/4 cup orange juice
1/2 cup granulated sugar
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup butter or margarine

Directions

1.      Preheat oven to 425 degrees.
2.      In a blender or large bowl, mix eggs, milk, orange juice, granulated sugar, flour and salt until blended.
3.      If you are using a mixer batter will remain lumpy.
4.      Melt butter or margarine into a 13in. x 9in. baking dish in oven until it sizzles. Do not let brown.
5.      Remove baking dish from oven and immediately pour batter into sizzling butter or margarine.
6.      Bake in middle of oven for 20 minutes or until puffed and brown.

 Ingredients
1 large can fruit cocktail
1 small jar maraschino cherries
1 large red apple, diced
1/2 bag miniature marshmallows
1 small bag flaked coconut
8 ounces sour cream
1 cup nuts

Directions

1.      Mix all ingredients-including liquids together. Chill.

Applesauce Cookies


Ingredients

1/2 cup shortening
1 cup granulated sugar
1 cup unsweetened applesauce
1 teaspoon baking soda
2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup chopped raisins
3/4 cup chopped nuts
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Directions

1.      Preheat oven to 375 degrees F.
2.      Cream shortening and sugar together.
3.      Add applesauce and blend into mixture.
4.      Sift flour, add baking soda, salt and spices to flour and sift again.
5.      Add sifted dry ingredients to shortening and stir until smooth.
6.      Stir in raisins and nuts.
7.      Drop onto a greased baking sheet spacing approximately 2 inches apart.
8.      Bake for approximately 12 minutes.

Christmas Crackle Candy

Ingredients

3 3/4 cups sugar
1 1/2 cups light corn syrup
1 cup water
1 teaspoon cinnamon flavoring oil
powdered sugar

Directions

1.      Mix first 3 ingredients in a large saucepan.
2.      Stir over medium heat until temperature reaches 310 degrees.
3.      Stir in flavoring and color.
4.      Pour onto greased cookie sheet.
5.      Break into pieces.
