Puffed Pancake “Gotta Try This”

Makes 6 servings

Ingredients

6 eggs
1 cup milk
1/4 cup orange juice
1/2 cup granulated sugar
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup butter or margarine

Directions

1.      Preheat oven to 425 degrees.
2.      In a blender or large bowl, mix eggs, milk, orange juice, granulated sugar, flour and salt until blended.
3.      If you are using a mixer batter will remain lumpy.
4.      Melt butter or margarine into a 13in. x 9in. baking dish in oven until it sizzles. Do not let brown.
5.      Remove baking dish from oven and immediately pour batter into sizzling butter or margarine.
6.      Bake in middle of oven for 20 minutes or until puffed and brown.

 Ingredients
1 large can fruit cocktail
1 small jar maraschino cherries
1 large red apple, diced
1/2 bag miniature marshmallows
1 small bag flaked coconut
8 ounces sour cream
1 cup nuts

Directions

1.      Mix all ingredients-including liquids together. Chill.

Applesauce Cookies


Ingredients

1/2 cup shortening
1 cup granulated sugar
1 cup unsweetened applesauce
1 teaspoon baking soda
2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup chopped raisins
3/4 cup chopped nuts
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Directions

1.      Preheat oven to 375 degrees F.
2.      Cream shortening and sugar together.
3.      Add applesauce and blend into mixture.
4.      Sift flour, add baking soda, salt and spices to flour and sift again.
5.      Add sifted dry ingredients to shortening and stir until smooth.
6.      Stir in raisins and nuts.
7.      Drop onto a greased baking sheet spacing approximately 2 inches apart.
8.      Bake for approximately 12 minutes.

Christmas Crackle Candy

Ingredients

3 3/4 cups sugar
1 1/2 cups light corn syrup
1 cup water
1 teaspoon cinnamon flavoring oil
powdered sugar

Directions

1.      Mix first 3 ingredients in a large saucepan.
2.      Stir over medium heat until temperature reaches 310 degrees.
3.      Stir in flavoring and color.
4.      Pour onto greased cookie sheet.
5.      Break into pieces.

Sweet Potato Pie

 Ingredients
1 (9 inch) unbaked deep dish pie shell
1 1/2 cups sugar
3 eggs
1 1/2 cups mashed sweet potato
1 teaspoon vanilla flavoring
1/2 cup butter, melted
1 small can evaporated milk (2/3 cup)

Directions

1.      Preheat oven to 350 degrees.
2.      Cream eggs and sugar; add sweet potato, vanilla and butter; add milk and mix well.
3.      Pour into unbaked pie shell.
4.      Bake for 1 hour.

Dish of Dirt

Makes 4 servings

Ingredients

14 crushed Oreo cookies (about 1 cup of crumbs)
1 pint chocolate ice cream
1/4 cup chocolate flavored syrup
10 gummy worms (for garnish)
1 half pint prepared whipped cream topping (for garnish)

Directions

1.      In each of four dessert dishes, place 2 tablespoons of cookie crumbs.
2.      Top each with 1/2 cup of ice cream, remaining 2 tablespoons of cookie crumbs and 1 tablespoon syrup. Garnish with gummy worms and whipped topping.

Christmas Mixed Glace Fruit Loaf


Ingredients;

185g butter
1/2 cup castor sugar
3 eggs
3/4 cup finely chopped glace pineapple
1 1/2 cups glace cherries
1/2 cup finely chopped apricots
1 1/2 cups plain flour
1/2 cup self-rising flour
1/2 cup milk
1 tablespoon sweet sherry

Directions;

1.Grease a 15x25cm loaf pan, line base and sides with parchment paper, then grease paper.
2.Cream butter and sugar in a small bowl with electric mixer only until combined.
3.Add eggs quickly, one at a time. Beat until combined.
4.Transfer mixture into a large bowl.
5.Stir in fruit, then half of the sifted flours with the combined milk and Sherry.
6.Stir in remaining flour and milk mixture.
7.Spread mixture into prepared pan.
8.Bake in moderately slow oven for about 2 hours.
9.Cover with foil, cool in pan.
